Whilst I was away travelling for a couple of months earlier this year there was one thing that I missed eating more than anything else….Granola!
I love making my own granola because it means that I know exactly what goes into it. Most store bought granola is packed with extra sugars, fats and unnecessary ingredients. Whilst cooking, it also makes your kitchen smell AMAZING!
Mixing granola with quinoa makes it a brilliant, healthy option for breakfast. Quinoa is one of the most protein rich foods that we can eat and contains almost twice as much fibre as most other grains. Another positive of this wonder grain is that it contains iron making it an ideal food for vegans and vegetarians.
It’s super simple to make, vegan, can be gluten free (just use gf oats) and can contain as little as 5 ingredients!
Quinoa (uncooked, white)
Seeds/nuts of your choice
Mix all of the ingredients together in a bowl
Place on an oiled baking tray
Place in the oven at 120 degrees for 10-15 mins or until browned.
Take out of oven and leave to cool
Pour mixture into air tight jar and keep for up to 2 weeks.
