Vegan Chocolate Cookies




I am SO excited by these cookies. They are so easy and quick to make and have been a firm favourite when we've needed something sweet during this lockdown.

They can also be made gluten free by creating the oat flour with gf oats.




Ingredients (Makes 8):

  • 200g oat flour (100g oats into a high-speed blender)

  • 120g coconut sugar (If you like it slightly less sweet then 100g would do)

  • 20g chia seeds (Optional for a little crunch)

  • 2tsp baking powder

  • 4tsp cacoa powder (if using cocoa, use a little less sugar)

  • A pinch of salt

  • 50g coconut oil

  • 70ml plant-based milk (I use oat)



Method:


  • Preheat the over to 190c

  • Gently heat the coconut oil until it has melted

  • Mix together the flour, sugar, chia seeds, baking powder and salt.

  • Add in the melted coconut oil and the milk and then mix.

  • It should be quite a thick consistency.

  • Roll the mixture into 8 balls. (The Cookie dough is incredible and it takes all my will not to eat it all before cooking but they're worth it I promise!)

  • Place the balls on a baking tray, keeping space between them.

  • For soft, doughy cookies, bake for 8minutes, for slightly harder cookies bake for 10mins.

  • As soon as you've removed from the oven, gently press the top of the ball with a spoon to create the shape you want and then leave to cool. (They are quite fragile until they have cooled fully - if you can't wait then just be a little careful)
